Inspired by the classic Austrian Strudel, this empanada is a tribute to artisanal pastry. We use crisp, tart green apples, peeled and cut by hand every day. We sauté them with butter, brown cane sugar, and a selection of spices until they reach a deep, glossy caramelization. Finally, we add sultana raisins for sweetness and juiciness.
